A simple yet very tasty dessert with apricot halves topped with meringue. Lovely served with a spot of ice cream after a nice meal. This dessert is rather sweet, so you can consider serving quite small portions.

1 tin apricots halves in syrup
2 tablespoons soft brown sugar
1 teaspoon ground cinnamon (optional)
2 egg whites
110g caster sugar
fresh mint, to garnish

Preheat the oven to 170 C / Gas 3.
Empty the apricots into a small baking dish, with about 1/3 of the syrup from the tin. Sprinkle the soft brown sugar and cinnamon, if using, on top.
In a clean mixing bowl, whisk the egg whites gradually adding the caster sugar until stiff glossy peaks form. Spoon over the apricots and spread to the edges of the baking dish.
Bake in the preheated oven for 30 minutes until the meringue is blushed golden brown. Remove from the oven and garnish with some fresh mint.
