Dairy free coconut panna cotta

    An amazingly creamy dessert despite being dairy free! This recipe is easy to make and delicious.

    Serves: 4 

    • 1/2 pint Alpro® coconut milk
    • 1/2 pint Alpro® cream
    • 1 vanilla pod, split (optional)
    • 12g sachet dairy free gelatine
    • 75g dairy free dark chocolate

    1. Put coconut milk and cream in a pan with the split vanilla pod. Slowly bring to a gentle boil over a low heat until bubbles form around the edges.
    2. While the milk mixture is boiling prepare the gelatine (follow packet instructions).
    3. When the mixture is bubbling around the edges remove from the heat and take out the vanilla pod if used. Add the gelatine and stir until well mixed.
    4. Pour the mixture in to a mould of your choice, put in the fridge and leave to set (preferably overnight, or good 4 hours)
    5. Remove the panna cotta from the mould before serving and grate the dairy free dark chocolate over the top.


    You can make this with regular cream instead of the non-dairy cream, or indeed 600ml (1 pint) of regular cream instead of coconut milk and non-dairy cream.

    I made this specially for my niece who is on a dairy free diet, but was very disappointed when it didn't set AT ALL, even though I used a 13g sachet of gelatine and put it in the fridge overnight! I assume this recipe was tried and tested? Therefore, I would like to know how you managed to get it to set just by using one 12g sachet as mine was just like milk! However, the flavour was lovely so I will try again one day but will use three sachets next time.  -  07 Oct 2016
