About this recipe:
A mouthwatering recipe for cookies using porridge oats, this recipe can be used for almost any type of cookie you fancy. Try adding chocolate chips, nuts, sultanas, raisins or apricots, or whatever you desire.
1 dozen cookies
110g self raising flour
110g porridge oats
1 teaspoon ground cinnamon (optional)
50g sultanas (or chosen ingredient)
75g demerara sugar
1 dessertspoon golden syrup

In a large mixing bowl combine the self raising flour, oats, cinnamon and sultanas.
In a large saucepan combine the margarine, sugar and golden syrup. Place over a low heat till melted.
Taking walnut sized amounts of mixture, roll into rounds and place on a floured baking tray.
Allow the melted ingredients to cool for 5 minutes before adding to the dry contents in the mixing bowl. Mix well.
Bake for 12 minutes at 180 C / Gas 4.
Put on a cooling rack. The cookies will be slightly soft when they come out but will harden.
