Aubergine and chickpea curry

    A scrummy vegetarian curry with hearty aubergines and chickpeas. Easily made in less than an hour with storecupboard ingredients.

    Serves: 4 

    • 2 aubergines
    • 2 tablespoons sunflower oil
    • 1 tablespoon brown or black mustard seeds
    • 2 onions, finely chopped
    • 2 chillies, chopped
    • 4 teaspoons garam masala
    • 2 teaspoons ground coriander
    • 2 teaspoons turmeric
    • 400ml tin coconut milk
    • 6 tomatoes , quartered
    • 400g tin chickpeas, drained and rinsed

    1. Halve the aubergines then cut each half into wedges. Heat 1/2 tablespoon of the oil in a large pan and brown half of the aubergines for 2 to 3 minutes on each side until golden brown and crisp all over. Repeat with remaining aubergines. Set aubergines aside.
    2. Add the remaining oil to the pan with the mustard seeds and cook for 30 seconds. Stir in the onions and cook until softened. Add the chillies and spices with a spoonful of thick coconut milk from the top of the tin, then fry for a further minute. Add the remaining coconut milk, tomatoes and half a tin of water. Simmer for 25 to 30 minutes until thick and saucy.
    3. Stir in the chickpeas and aubergines and continue to simmer for a further 5 minutes.

    To serve

    Serve with rice, warm naan bread and scatter with fresh coriander leaves.

    Easy to make, I used tinned tomatoes instead of fresh ones, I also added desiccated coconut, just because I love coconut. Very tasty.  -  23 Feb 2016


    Really tasty & easy to make. I am eating it as I type mmmmmmmmmmmmmmmm. Had a late glut of Aubergines in the greenhouse & fed up with parmigiano so curry it is. Didn't have any chillies so added some flakes, a bit to hot but that's my fault. Would make again and will freeze what I have left in portion sizes so a quick easy winter meal...Thanks for a lovely recipe...  -  20 Nov 2017
