Chewy cinnamon cookies

    I shared my daughter's favourite cookies, it's only fair that I share my son's favourite too. Have to say I love these soft chewy cookies.

    Makes: 36 cinnamon cookies

    • 250g plain flour
    • 1 1/2 teaspoons bicarbonate of soda
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon salt
    • 300g granulated sugar
    • 165g unsalted butter, softened
    • 1 large egg
    • 85g treacle

    1. Preheat oven to 180 C / Gas 4 and grease or line two baking trays.
    2. In a medium bowl sift flour, bicarb, cinnamon and salt.
    3. With an electric mixer, beat the butter and 200g of the sugar until light and fluffy. Beat in egg and treacle. Reduce speed to low. Gradually mix in dry ingredients until cookie mixture is formed.
    4. Roll cookie mixture into balls, each equal to 1 tablespoon. Roll balls in the remaining sugar. Arrange balls on baking trays, about 3 inches apart.
    5. Bake, one tray at a time, until edges of cookies are just firm, about 10 to 15 minutes.Remove from the oven and cool for 1 minute on the baking tray then transfer to cooling racks.
