    About this recipe: Rock cakes have always been a favourite in my family. They’re so simple, yet so delicious served with a cup of tea.

    Makes: 8 reliable rock cakes

    • 90g (3 oz) butter (or margarine), at room temperature
    • 90g (3 oz) caster sugar
    • 1 egg
    • 170g (6 oz) self raising flour
    • 90g (3 oz) fruit, nuts or chocolate
    • glace cherries, to decorate

    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Preheat the oven to 200 C / Gas 6. Grease a non-stick baking tray.
    2. Using an electric whisk, beat together the butter and sugar until you get a thick, icing-like mixture. If you don’t have an electric whisk, just keep going until your arm gives up on you!
    3. Next, whisk in the egg. Once that’s mixed, stir in the flour and your filling (e.g. raisins, walnuts, chocolate). The mix should be really thick by now and a little sticky.
    4. The best way to get these out on your tray is to get messy and use your fingers. Flour them up a little bit first, then plunge right in and grab walnut-sized balls of the delightful mix. Roll them around in any leftover sugar you have, then plonk them on the prepared baking tray. Pop a cherry on top.
    5. Bake in the preheated oven for about 15 minutes. Once they’ve gone lovely and golden brown, grab them out the oven and scoff them down with a lovely cup of tea. Delicious!
