Tasty family chilli

    This chilli I came up with to feed the kids on a budget. All the ingredients are Sainsbury's own brand, to keep costs down. My kids absolutely love this dish and due to its mild flavour even my 18 month old can enjoy it with us.

    Serves: 4 

    • 2 tablespoons olive oil
    • 2 medium onions, roughly chopped
    • 1 medium red pepper, chopped
    • 1 stick celery, roughly sliced (optional)
    • 500g minced beef
    • 2 to 3 cloves garlic, minced
    • 1/2 teaspoon cayenne pepper
    • 1 teaspoon mild chilli powder
    • 1/2 teaspoon ground cumin
    • 1 teaspoon dried oregano
    • 2 teaspoons sea salt
    • 1 (390g) tin chopped tomatoes
    • 4 tablespoons tomato ketchup
    • 200ml beef stock
    • 1 (400g) tin kidney beans

    1. Heat the oil in a large saucepan, add the onion, pepper and celery. Cook and stir over a medium high heat for 3 to 4 minutes to begin softening. Next add the minced beef and cook and stir to brown.
    2. Once the beef is browned, add the garlic, spices, oregano and salt. Increase the heat and fry for a minute or two. Add the tinned tomatoes, ketchup and stock. Reduce the heat and simmer for about 15 minutes.
    3. Finally add the kidney beans then simmer for a further 5 minutes and serve.


    The celery, while unconventional, is just there in order to sneak some more veg into the kids and is completely optional.
