Heat the oil in a large saucepan, add the onion, pepper and celery. Cook and stir over a medium high heat for 3 to 4 minutes to begin softening. Next add the minced beef and cook and stir to brown.
Once the beef is browned, add the garlic, spices, oregano and salt. Increase the heat and fry for a minute or two. Add the tinned tomatoes, ketchup and stock. Reduce the heat and simmer for about 15 minutes.
Finally add the kidney beans then simmer for a further 5 minutes and serve.
The celery, while unconventional, is just there in order to sneak some more veg into the kids and is completely optional.
