About this recipe: Spaghetti, my way. This spaghetti dish is simple, flavourful and ready in about 30 minutes making it an ideal choice for a quick midweek supper.

Serves: 2 

  • oil, as needed for cooking
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tin tomatoes
  • 1 teaspoon minced basil
  • 200g spaghetti
  • 1 teaspoon balsamic vinegar
  • 3 teaspoons olive oil
  • salt and pepper, to taste

  1. In a frying pan over a medium heat, warm a little oil then add the onion and garlic and cook and stir until soft. Add the tomatoes and basil, reduce the heat and continue cooking for 10 minutes.
  2. In a saucepan of boiling salted water, cook the spaghetti according to the instructions on the packet, or until the spaghetti is al dente, about 20 minutes. Drain.
  3. Meanwhile, combine the balsamic vinegar, olive oil and seasoning.
  4. In a warmed serving bowl combine the spaghetti, the tomato mixture and the balsamic mixture. Toss and serve immediately.
