Spaghetti, my way. This spaghetti dish is simple, flavourful and ready in about 30 minutes making it an ideal choice for a quick midweek supper.

    1. In a frying pan over a medium heat, warm a little oil then add the onion and garlic and cook and stir until soft. Add the tomatoes and basil, reduce the heat and continue cooking for 10 minutes.
    2. In a saucepan of boiling salted water, cook the spaghetti according to the instructions on the packet, or until the spaghetti is al dente, about 20 minutes. Drain.
    3. Meanwhile, combine the balsamic vinegar, olive oil and seasoning.
    4. In a warmed serving bowl combine the spaghetti, the tomato mixture and the balsamic mixture. Toss and serve immediately.

This is good. I used a 250g tin of tomatoes. It was enough for 400g of spaghetti. Also, it really only takes about 15 minutes total. The spaghetti only needs ten minutes, so it’s super fast to get on the table.  -  19 Mar 2018
