2 skinless chicken breast fillets, sliced into strips
Cajun spice, to taste
1 to 2 pinches pepper
1 teaspoon chicken gravy granules
4 tablespoons boiling water
85ml full fat cream
2 handfuls peas (optional)
2 handfuls mushrooms, sliced (optional)
1 packet Uncle Ben's® white rice

In a frying pan over a medium heat, warm a little oil then fry the chicken strips. Add a little Cajun spice and pepper.
Prepare the chicken gravy by mixing the granules with a few tablespoons boiling water and pour into the frying pan along with the chicken.
Once the chicken is no longer pink in the centre, taste test and add a little more Cajun spice and pepper if desired. Stir in the cream and allow to simmer gently. Add a handful of peas or mushrooms at this stage, if using.
Cook the rice according to the instructions on the packet. Spoon into a serving bowl and top with the Cajun chicken. Serve hot.
