Cajun chicken with white rice

    This Cajun chicken with white rice is a classic dish, with a bit of fire, or mild, however you prefer.

    • oil, as needed for cooking
    • 2 skinless chicken breast fillets, sliced into strips
    • Cajun spice, to taste
    • 1 to 2 pinches pepper
    • 1 teaspoon chicken gravy granules
    • 4 tablespoons boiling water
    • 85ml full fat cream
    • 2 handfuls peas (optional)
    • 2 handfuls mushrooms, sliced (optional)
    • 1 packet Uncle Ben's® white rice

    1. In a frying pan over a medium heat, warm a little oil then fry the chicken strips. Add a little Cajun spice and pepper.
    2. Prepare the chicken gravy by mixing the granules with a few tablespoons boiling water and pour into the frying pan along with the chicken.
    3. Once the chicken is no longer pink in the centre, taste test and add a little more Cajun spice and pepper if desired. Stir in the cream and allow to simmer gently. Add a handful of peas or mushrooms at this stage, if using.
    4. Cook the rice according to the instructions on the packet. Spoon into a serving bowl and top with the Cajun chicken. Serve hot.
