    About this recipe: Banana bread with no added sugar and no nuts, so good for diabetics and people with nut allergies. Makes about three loaves or one 22cm diameter cake.

    Ingredients
    Serves: 10 

    • 560g self raising flour
    • 1 teaspoon baking powder
    • 28g Canderel® or Splenda®
    • 3/4 teaspoon ground cinnamon
    • 3/4 teaspoon ground nutmeg (optional)
    • 8 bananas, roughly chopped
    • 6 eggs, beaten
    • 400g melted margarine

    Method

    1. Preheat oven to 180 C / Gas 4. Grease three small loaf tins, or one round 22cm cake tin.
    2. Into a large bowl, sift the flour, baking powder, Canderel®, cinnamon and nutmeg (if using) and mix well.
    3. In a separate bowl, mash the bananas then add eggs and melted margarine and mix together. Mix the wet ingredients into the dry mixture. Spoon into prepared loaf tins or round cake tin.
    4. Bake in the preheated oven for 1 hour and 20 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool before slicing and enjoying.
