About this recipe: This sponge cake is a simple, plain sponge which can be used for any cake. I used this to make a cake where I had plain sponge on the top and chocolate on the bottom, turned out great and raised really well! This can be split into 2 sandwich tins but I put it all in one as I wanted it to be high so that with the chocolate cake it would be a big cake.

Makes: 1 20cm sponge cake

  • 200g caster sugar
  • 200g softened butter
  • 4 eggs, beaten
  • 200g self raising flour
  • 1 teaspoon baking powder
  • 2 tablespoons milk

  1. Preheat the oven to 190 C / 170 C Fan / Gas 5. Butter a 20cm tin thoroughly.
  2. In a large bowl, beat all the ingredients together until you have a smooth cake mixture.
  3. Transfer the mixture to the prepared cake tin, smooth the surface with a spatula or the back of a spoon.
  4. Bake in the preheated oven for 30 to 35 minutes until golden, a skewer inserted into the centre comes out clean and the cake springs back when pressed. Make sure to keep an eye on it as it may take less or longer, depending on your oven. Turn onto a cooling rack and leave to cool completely. Once cooled, decorate however you want!

Chocolate version

To make this cake into the chocolate cake version, add 3 tablespoons cocoa powder to the mixture in step 2.

what a good idea plain on the bottom and choc on the top. it looks nice and high. will make this on the weekend. let you know how it turns out. - 18 Mar 2015
