About this recipe:I made this today for the first time and loved it. A light meal for dinner and super healthy too. Add as much or as little of the spices as you'd like, and change it up by all means with your favourite herbs and spices.
3 tablespoons garlic chilli sauce (I buy mine in pound shops)
1 French baguette
I Can't Believe It's Not Butter!® Light (optional)
2 tablespoons light mayonnaise ( I used Hellmann's® Lighter than Light)
2 teaspoons chopped chives

Heat the water in a small pan till simmering. Add the chicken, peppers and spring onion. Gradually add the spices, then add the garlic chilli sauce. Gently boil till the chicken is no longer pink in the centre and the sauce is reduced. Remove from heat and let cool slightly.
Slice the baguette lengthways, then cut into three portions. Butter, if liked.
Add the chicken mixture to the mayo in a mixing bowl and toss. Divide it between the baguette portions to make three sandwiches. Sprinkle with chives, then sit back relax and enjoy.
Please note you do have to wait for the chicken to cook fully before tasting, as i just got a 1 star rating because i didnt mention this. ( thought it was common sense to not try uncooked meat ect )
