About this recipe: The title says it all! These chocolate muffins are ready in less than 30 minutes. You could mix up the chocolate chunks by using any variety of chocolate - white, milk, plain - or a mixture.

Makes: 12 muffins

  • 115g plain flour
  • 15g unsweetened cocoa powder
  • 55g caster sugar
  • 1 1/2 teaspoons baking powder
  • 1 pinch ground cinnamon (optional)
  • 1 egg
  • 50ml sunflower oil
  • 75ml milk
  • 75g coarsely chopped chocolate

  1. Sieve all dry ingredients into a bowl and mix well.
  2. Whisk egg and sunflower oil together, then add some of the milk.
  3. Incorporate wet mix into dry mix. Add more milk until you get a soft but not sloppy mixture. Stir in the coarsely chopped chocolate. Divide between paper cases in a muffin tin.
  4. Bake in a preheated 190 C / Gas 5 oven for 12 to 15 minutes, or till a skewer inserted in the centre comes out clean. Cool on a wire rack.


Be careful adding milk. You want a moist but not wet mix or the chocolate will all sink. You may not use all of the milk.
