Really easy choc chunk muffins

    The title says it all! These chocolate muffins are ready in less than 30 minutes. You could mix up the chocolate chunks by using any variety of chocolate - white, milk, plain - or a mixture.

    Ingredients
    Makes: 12 muffins

    • 115g plain flour
    • 15g unsweetened cocoa powder
    • 55g caster sugar
    • 1 1/2 teaspoons baking powder
    • 1 pinch ground cinnamon (optional)
    • 1 egg
    • 50ml sunflower oil
    • 75ml milk
    • 75g coarsely chopped chocolate

    Method
    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Sieve all dry ingredients into a bowl and mix well.
    2. Whisk egg and sunflower oil together, then add some of the milk.
    3. Incorporate wet mix into dry mix. Add more milk until you get a soft but not sloppy mixture. Stir in the coarsely chopped chocolate. Divide between paper cases in a muffin tin.
    4. Bake in a preheated 190 C / Gas 5 oven for 12 to 15 minutes, or till a skewer inserted in the centre comes out clean. Cool on a wire rack.

    Tip

    Be careful adding milk. You want a moist but not wet mix or the chocolate will all sink. You may not use all of the milk.
