About this recipe: Very easy recipe for banana bread. No need to sieve anything. Just the washing up is a chore.

Makes: 1 loaf banana bread

  • 3 very ripe bananas
  • 200g plain flour
  • 200g caster sugar
  • 50g butter or margarine, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Prep:10min  ›  Cook:50min  ›  Ready in:1hr 

  1. Preheat oven to 180 C / Gas 4 and prepare a loaf tin by greasing with with a little butter.
  2. Mash the bananas in a bowl with a fork. Add flour, sugar, butter, egg vanilla extract and baking powder, mixing it all in well.
  3. Pour the mixture into the buttered loaf tin.
  4. Bake for about 50 to 60 minutes, or till a skewer inserted in the centre comes out clean.

Loved this uncomplicated and easy recipe. The kids are always leaving bananas to go rotten and this was the best solution. I had an extra banana and omitted the vanilla as I didn't have any. Still tasted delicious. I'm going to try to top it pre-bake with sliced bananas next time - 05 Dec 2014
