Easy and scrumptious coffee ice cream

    Easy to make and wonderful tasting coffee ice cream! Better to use caffeine free (decaffeinated) coffee, especially if kids will be eating it.

    Serves: 6 

    • 240ml almond milk (or coconut or soya milk)
    • 5 dessertspoons whole bean instant coffee granules (caffeine-free if you like)
    • 300ml extra thick double cream
    • 300ml single cream
    • 130g caster sugar
    • 2 dessertspoons vanilla extract
    • 1 pinch salt

    1. Start heating up the milk and mix in the instant coffee granules. When all the granules have dissolved, stop heating (do not boil). Put the milk-coffee mixture in a bowl to cool fully.
    2. Put the remaining ingredients in a large mixing bowl. Add the cooled milk-coffee mixture and whisk everything together for 1 to 2 minutes.
    3. Add the mixture to your ice cream maker and freeze for 30 minutes (or according to the manufacturer's instructions).


    This recipe may well work with real milk (cow's milk) but I have so far tried it with only almond milk and coconut milk (only because we never have cow's milk in the house).
