Almond nut butter

    Almond nut butter is a great way to boost your almond intake, which are packed full of vitamins, minerals, protein and fibre! Try this recipe created by Carey Davis-Munro, Founder of Sweet Virtues super food truffles.

    Serves: 8 

    • 400g blanched almonds
    • 1 teaspoon extra virgin olive oil
    • 2 tablespoons coconut oil
    • 1 pinch salt

    1. Preheat oven to 180 C / Gas 4.
    2. Spread the almonds out on a shallow oven dish, drizzle very lightly with olive oil and roast slowly until they are a pale golden brown. Be careful to keep watch of them as they will suddenly change colour and can burn.
    3. Remove the almonds, and allow to cool slightly before transferring to a kitchen blender, food processor or similar. Whiz for 30 seconds or so until the nuts start to become a paste and use a spatula to ensure it is all brought in from the edges.
    4. Add the coconut oil and salt to taste and and then whiz again for a further 30 seconds until you reach the consistency you are happy with. Longer for smoother consistency, shorter for a crunchier mouthfeel.
    5. Remove into containers and either place in the fridge or cupboard depending on how you like to enjoy your nut butter. Enjoy!
