Nut butters are packed full of vitamins, minerals, protein and fibre, and this version lends an indulgent-tasting twist thanks to cocoa powder! Enjoy spread thickly on oat or spelt crackers for long lasting energy.
1 to 2 tablespoons sweetener, such as dark agave, Manuka honey or coconut sugar

Preheat oven to 180 C / Gas 4.
Spread the almonds out on a shallow oven dish, drizzle very lightly with olive oil and roast slowly until they are a pale golden brown. Be careful to keep watch of them as they will suddenly change colour and can burn.
Remove the almonds, and allow to cool slightly before transferring to a kitchen blender, food processor or similar. Whiz for 30 seconds or so until the nuts start to become a paste and use a spatula to ensure it is all brought in from the edges.
Add the coconut oil and salt to taste and and then whiz again for a further 30 seconds until well combined. Then start adding the sweetener of choice, and whiz together till you're happy with the sweetness level and the consistency. Longer for smoother consistency, shorter for a crunchier mouthfeel.
Remove into containers and either place in the fridge or cupboard depending on how you like to enjoy your nut butter. Enjoy!
