Wham bam thank you ma'am burgers

    Juicy tasty burgers adapted from my wife's cookbook for her children. Using beef, lamb and bacon, these are packed with flavour and sure to please.

    Makes: 8 burgers

    • 500g lamb mince
    • 500g beef mince
    • 100g streaky bacon, diced
    • 1 onion, finely chopped
    • 1 egg
    • 1 large handful chopped coriander
    • 1 garlic clove, minced (or more if vampires worry you)
    • 2 teaspoons salt
    • 1 teaspoon ground black pepper
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • 1/2 teaspoon ground allspice
    • 1/2 teaspoon cayenne pepper
    • plain flour, as needed

    1. Mix all the ingredients except for the flour together in a large bowl. Cover and chill for at least an hour.
    2. Shape mixture into patties of about 150g each, ideally using a burger press. Dust with a little flour.
    3. Grill on a barbecue preheated to medium high until done on the outside and pink in the middle, or a total of 6 minutes for medium-rare, 8 minutes for medium, or 10 minutes for well done. Can also be cooked in a ridged griddle or frying pan using the same timings. Serve on buns with topping of your choice.
