About this recipe: An easy, straight forward way to create tasty Turkish delight. These also make great gifts for Mother's Day, Valentine's or simply if you want to surprise someone you care about. Try filling up a new mug with the Turkish delight cubes and wrapping with cellophane and a ribbon.

Makes: 700 g Turkish delight

  • 500g caster sugar
  • 300ml water
  • 25g powdered gelatine
  • 3 to 5 teaspoons rose water (to taste)
  • 1 to 3 drops of pink liquid food colouring
  • 8 tablespoons icing sugar
  • 3 tablespoons cornflour

  1. Pour the sugar, water, powdered gelatine and rose water into a large pan. Gently heat the ingredients until the sugar and gelatine have completely dissolved, stirring continuously. Do not let it boil just yet.
  2. Once the sugar and gelatine have dissolved, bring the liquid to the boil without stirring. Boil for 2 minutes.
  3. Bring the mixture down to a simmer (just below boiling). Simmer for 25 minutes.
  4. Take it off of the heat. Stir in the food colouring. Leave to cool for 2 minutes.
  5. Dampen a sandwich tin with cold water and pour the mixture in. Leave to set in the fridge for 24 hours.
  6. Once the 24 hours are over, get a cold damp knife and cut around the edge of the tin to help ease out the Turkish delight. Cover a plate in half of your icing sugar and 1 tablespoon of cornflour.
  7. Ease the Turkish delight out onto the plate. Dampen your knife and cut into cubes.
  8. Finally, pour over the remaining cornflour and icing sugar onto the sweets, ensuring every piece is covered.


These will last in the fridge for 4 days, or a little longer if stored in a cardboard container with more icing sugar and cornflour.

Not great. Followed the recipe exactly and the consistency was totally wrong for Turkish delight. Ended up in the bin - 04 Sep 2016
