1/2 packet raspberry jelly (about 75g)
250ml boiling water
100g fresh raspberries
150g vanilla drinking yoghurt

Combine the raspberry jelly with boiling water in a bowl. Stir well till the jelly has dissolved, then transfer to the fridge to set, about 2 hours.
Pass the raspberries through a sieve, discarding the leftover seeds. Combine the raspberry juice and yoghurt in a blender and pulse till combined. Add the set jelly; pulse for a minute or two till well combined (mixture should not be completely smooth).
Pour the mixture into lolly moulds or ice cube trays. Insert lolly sticks, then cover with cling film.
Freeze overnight, then enjoy!
You could speed up the process by either using 325g of ready made jelly, or by making the jelly as stated in step 1, then letting it cool slightly and combining straightaway with the yoghurt and raspberry mix. Pour directly into ice cube trays or lolly moulds, then freeze overnight. The result is smoother than combining the set jelly with the raspberry-yoghurt mix.
