Adding a little garlic to mayonnaise takes it to a whole new level. Wonderful on sandwiches and for dipping your chips into.

2 large egg yolks
1 teaspoon Dijon mustard
salt and pepper, to taste
1 clove garlic, minced
1 teaspoon white wine vinegar
1/2 teaspoon lemon juice
300ml olive oil

Place the egg yolks in a mixing bowl and add the mustard, seasoning, minced garlic, vinegar and lemon juice. Using a handheld whisk, begin whisking the mixture until it becomes pale and smooth.
Very gradually, a drop at a time to begin with, start adding the oil whisking continuously until the mayonnaise is thick and creamy. Taste test and season again if necessary. Serve or store covered in the fridge for up to 3 days.
