About this recipe: Got this one off my mum in exchange for the recipe for bara brith - she used to make it when we were kids. Despite using syrup, it is fatless, so it's sort of good for you.

Makes: 1 (1 lb) loaf cake

  • 375g self raising flour
  • 200g caster sugar
  • 170g mixed fruit
  • 2 tablespoons golden syrup
  • 300ml milk

Prep:15min  ›  Cook:1hr30min  ›  Ready in:1hr45min 

  1. Sift together the flour and sugar, then add in the fruit.
  2. Mix in the syrup, then slowly beat in the milk to form a smooth dropping consistency. Pour into a greased and lined 1lb loaf tin.
  3. Bake at 170 C / Gas 3 for 1 1/2 hours.
