Heat the oil in a large frying pan. Brown the beef in the oil, sprinkle on some paprika and fry for a few minutes to seal flavour.
Add the beef to a large casserole or wok with a lid, add the passata, garlic and curry powder. Leave to simmer on low for an hour. Alternatively, add everything to a slow cooker and cook on Low for 6 to 8 hours.
Cook the rice according to the packet instructions, adding the sweetcorn and peas to cook along with it.
When the beef has softened add the stock cubes, stir for several minutes until dissolved and serve with the rice.

This is by far the best beef curry I have tasted in ages! Really rich and delicious, with so few ingredients it was very quick and simple to make too. I used quite a lot of curry powder (approx 3 heaped tsp) and made it spicy. - 02 Feb 2015
