Makes: 12 peanut butter and banana cupcakes
50g butter, at room temperature
100g peanut butter, more for decorating
150g caster sugar
2 bananas, mashed
150g plain flour
dried banana slices (optional)

Preheat the oven to 180 C / Gas 4. Line a muffin tin with paper cupcake cases.
In a mixing bowl, beat together the butter, peanut butter and sugar until creamy. Beat in the eggs, one at a time, beating well after each addition. Fold in the mashed banana until well combined then fold in the flour until just mixed. Spoon the mixture evenly into the paper cupcake cases.
Bake in the preheated oven for 20 to 25 minutes until risen and golden and a skewer inserted into the centre comes out clean.
Remove from the oven and leave to cool before spreading a little peanut butter over the top and adding a dried banana slice for decoration.
Excellent flavour and texture (I used crunchy peanut butter) but I noticed in list of ingredients that there was no raising agent, so I added a teaspoon of baking powder and they rose beautifully.
