    1. Preheat the oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. Sift the flour, ginger and bicarb into a large mixing bowl. Cut the butter into chunks with a blunt knife then add it to the bowl and stir it in so that it is coated in the flour.
    3. Rub the butter into the flour with your fingers until the mixture resembles fine breadcrumbs then stir in the sugar.
    4. Break the egg into a small bowl, then add the syrup. Mix together with a fork then stir the mixture into the flour.
    5. Mix everything together until the mixture resembles a firm dough. Then sprinkle a clean surface with flour and put the dough onto it and knead for a few minutes until smooth.
    6. Sprinkle more flour onto the work surface then roll out the dough on the surface until it is 5mm (1/4 inch) thick. Use a star-shaped biscuit cutter to cut out the stars. Squeeze the scraps then roll it out again and cut out more until the mixture is all used up.
    7. Bake the biscuits for 12 to 15 minutes or until golden brown. Carefully lift them out onto a cooling rack and leave them to cool. Once cooled decorate with icing and sweets or chocolate.
