Malagueña Lemon and Dill Vinaigrette

    • 30ml/2tbsp Extra Virgin Olive Oil
    • 15ml/1tbsp White Wine Vinegar
    • ¼tsp Garlic - finely chopped
    • 1tbsp Dijon Mustard
    • 1tbsp Dill - finely chopped
    • Squeeze fresh Lemon Juice - to taste
    • Salt and freshly ground Black Pepper


    1. In a small bowl, combine, stirring well, the mustard and vinegar together;
    2. Add, stirring continuously, the dill, garlic and lemon juice;
    3. Gradually, whisking continuously, add the oil;
    4. Season, to taste, with salt and pepper;
    5. Serve or can cover and leave to sit for 30 minutes or so before using.
