Popcorn on the cob

    These are a hit with everyone! It's like a sweet and savory rice crispy treat - using popcorn as the base.

    Ingredients
    Makes: 8 cobs

    • 110g unsalted butter (plus extra for your hands)
    • 275g plain marshmallows
    • 4 tablespoons light brown sugar
    • 150g popped popcorn
    • 75g mini Smarties® or M&M's®

    Method

    1. Melt butter in a large pan over low heat. Add marshmallows and sugar. Stir until melted, then remove from heat.
    2. Combine butter mixture with the popcorn. Butter your fingers and toss well to coat, adding the Smarties® or M&M's®.
    3. With buttered hands, form mixture into oblong cob shapes. Let cool on a parchment-lined baking tray.
    4. Wrap each "cob" in a piece of parchment, creating a "husk". Using brown parchment looks nicest.

    6. Cut a 50cm length of brown baking parchment and fold, accordion-style, into 6cm folds. Cut the sides of one end to make a deep point leaving sides intact. Unfold paper and wrap it around the cob. Twist bottom to secure, then peel back layers and serve!
