Apple and almond is always such a delightful combination of flavours. We love to make these squares in the autumn months when apples are a plenty in our orchard.

175g butter, softened
175g brown sugar
3 eggs, beaten
100g self raising flour
100g ground almonds
1 pinch ground cloves
1 teaspoon ground cinnamon
50g mixed dried fruit
100g flaked almonds
100g mixed nuts
2 medium cooking apples, cored and finely chopped

Preheat the oven to 180 C / Gas 4. Grease a 20x30cm cake tin and line with baking parchment.
In a mixing bowl combine the butter and sugar and beat until fluffy. Add the eggs, one at a time and beat until creamy. Fold in the remainder of the ingredients until well incorporated. Transfer to the prepared baking tin.
Bake in the preheated oven for 45 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin. Once cooled, use the baking parchment to help you lift the cake out of the tin. Cut into squares and serve.
