Jack Daniels and honey Quorn™ chicken, rice and veg.


    This main is yummy and easy to make! Tastes like Jack Daniels chicken from TGI Fridays! Ready in just over 30 minutes, so ideal for week nights.

    Serves: 2 

    • 3 teaspoons runny honey
    • 3 teaspoons Jack Daniels barbecue glaze
    • 200g Quorn™ chicken fillets, chopped
    • 1 dessertspoon olive oil
    • 5 mushrooms, chopped
    • 150g rice
    • 150g broccoli, cut into small florets

    1. In a mixing bowl combine the honey and Jack Daniels barbecue glaze and mix well. Add in the chicken and toss to ensure an even coating. Set aside.
    2. In a frying pan over a medium heat, warm the oil and add the mushrooms. Cook for 3 minutes then add chicken into the pan together with the marinade and add a splash of water. Simmer covered for 15 to 20 minutes, stirring occasionally.
    3. When there is about 10 minutes of cooking time left for the Quorn™ chicken, place the rice in a saucepan and add just enough water to cover. Bring to the boil then cover and reduce the heat to low allowing the rice to simmer until soft and fluffy, about 8 minutes.
    4. Bring a separate saucepan of water to the boil over a high heat and add the broccoli. Cook for 5 to 8 minutes until just tender. Drain.
    5. Serve the chicken with the rice and broccoli on a warmed plate. Enjoy this yummy yet simple recipe!
