Cheesy spinach rice quiche

    Delicious alternative to the usual mid-week meals. Ideal for vegetarians. Serve with a salad for a complete meal.

    Serves: 3 

    • 15g butter
    • 1 small onion, finely chopped
    • 100g fresh spinach
    • 100g to 200g egg fried rice
    • 150ml milk
    • 2 free range eggs
    • salt and black pepper, to taste
    • 100g mature Cheddar, grated (plus extra for topping)

    1. Preheat the oven to 180 C / Gas 4. Grease a 20cm casserole dish or tart tin.
    2. In a saucepan over a medium heat, melt the butter then add the onions and cook and stir until soft. Add the spinach and cook until just wilted. Tip in the rice, mix well and set aside.
    3. In a large bowl, whisk together the milk and eggs then add the cheese along with the rice mixture and mix well. Season to taste. Transfer the mixture to the prepared casserole dish or tart tin then sprinkle with cheese.
    4. Bake in the preheated oven for 20 minutes or until the cheese is bubbling on top. Remove from the oven and leave to stand for 5 minutes. Slice into squares and serve immediately.

    We loved this spinach bake. I doubled the recipe and used a sachet of Uncle Bens microwave rice. I used the tomato and basil flavour rice. It was really quick and easy to make. Definitely make again. Thanks  -  10 Nov 2017
