About this recipe: My mum used to make this with stale leftover bread as we couldn't afford to throw anything away, I now make it with stale bread, because I'm too tight to throw anything away!! Used with fruit out of the freezer, it cost nearly nothing.

Serves: 8 

  • 200g stale bread
  • 50g suet
  • 50g caster csugar
  • 1 large egg
  • 100g fruit (fresh or frozen)
  • 1 teaspoon mixed spice
  • milk, as needed

  1. In a food processor, blitz the bread until breadcrumbs form. Place the breadcrumbs in a bowl and cover with water. Leave to soak for about 30 minutes.
  2. Preheat the oven to 180 C / Gas 4. Grease an 18cm (7 in) baking dish.
  3. After 30 minutes, squeeze out as much water as you possibly can then return the soggy bread back in the bowl. Mix in all other ingredients and enough milk to make a soft consistency. Transfer to the prepared pudding dish and sprinkle with a little sugar.
  4. Bake in the preheated oven for 1 hour to 1 1/4 hours until golden brown on top.


Can be served warm with custard or cold as a cake.


Instead of the suet you can use melted margarine or oil.
