About this recipe: This simple savoury pie is cooked very slowly in a low temperature oven ensuring that the potatoes are wonderfully tender. Serve with a salad or veggies for a complete meal. Enjoy hot or cold, delicious!

Serves: 4 

  • 1 packet shortcrust pastry
  • 3 large potatoes, peeled and sliced thinly
  • 12 rashers bacon, chopped
  • 1 large onion, sliced
  • 100g to 200g cheese, sliced

  1. Preheat the oven to 120 C / Gas 1/2.
  2. On a floured work surface, cut the pastry in two then roll out to fit a medium sized baking tin. Lay one of the sheets into the base of the tin.
  3. Into the baking tin over the pastry put a layer of potatoes, onions, bacon and cheese and repeat this three times to build up the layers. Cover the pie with the remaining pastry and seal the edges. Cover with tin foil.
  4. Bake in the preheated oven for 3 and 1/2 hours then remove the foil and increase the heat to 180 C / Gas 4 and cook until the pastry is golden, about 10 to 15 minutes. Remove from the oven and serve.
