    About this recipe: Pan-fried in very little oil with onion, this is a simple and relatively quick method to cook celeriac.


    Serves: 6 

    • 2 tablespoons olive oil
    • 2 celeriac roots, peeled and cut into 2 cm cubes
    • 1 bunch spring onions, trimmed and chopped
    • salt and pepper, to taste
    • fresh parsley, chopped

    1. Heat the oil in a cast iron pan over medium heat. Add celeriac cubes.
    2. Cook without stirring until one side is browned, and then turn cubes. Continue cooking, turning to brown all sides, until tender, about 20 minutes.
    3. Lower the heat and stir in onions. Continue cooking, stirring frequently, until onions are soft. Season to taste with salt and pepper. Serve on warm plates topped with fresh parsley.
