About this recipe:
Pan-fried in very little oil with onion, this is a simple and relatively quick method to cook celeriac.
2 tablespoons olive oil
2 celeriac roots, peeled and cut into 2 cm cubes
1 bunch spring onions, trimmed and chopped
salt and pepper, to taste
fresh parsley, chopped
- Heat the oil in a cast iron pan over medium heat. Add celeriac cubes.
- Cook without stirring until one side is browned, and then turn cubes. Continue cooking, turning to brown all sides, until tender, about 20 minutes.
- Lower the heat and stir in onions. Continue cooking, stirring frequently, until onions are soft. Season to taste with salt and pepper. Serve on warm plates topped with fresh parsley.
