Preheat the oven to 180 C / Gas 4. Grease a 23cm square baking tin and line with baking parchment.
In a saucepan over a medium heat, slowly melt together the butter, syrup and caster sugar, stirring continuously.
In a separate bowl, mix together the oats, cocoa powder, chocolate chips and brown sugar. Pour the melted butter over the oat mixture and stir well to coat. Spoon into the prepared baking tin and press down with the back of a spoon to compact.
Bake in the preheated oven for 20 to 30 minutes or until golden brown. Remove from the oven, mark into squares and allow to cool completely in the tin. Cut into squares.
Melt the chocolate in a double boiler or in the microwave and dip the flapjack into bowl of melted chocolate. Use more chocolate if you need, or add a second layer for decadence.
Place on a sheet of baking parchment and allow to set before eating and enjoying.
Vary any ingredients to suit taste. DO NOT make a low fat version of this flapjack.
You can use porridge oats, rolled oats or royal oats for this recipe, you choose!
