    This is a recipe that brings back memories of cooking at school. A really easy recipe that is so easy to make and is a big hit with all the family. Children love helping to make these.

    Ingredients
    Makes: 12 raspberry buns

    • 1 pinch salt
    • 200g self raising flour
    • 100g butter
    • 100g caster sugar
    • 100g desiccated coconut (optional)
    • 1 egg, beaten
    • 1 tablespoon milk
    • raspberry jam, to taste

    Method
    Prep:15min  ›  Cook:12min  ›  Ready in:27min 

    1. Preheat the oven to 220 C / Gas 7. Grease a baking tray.
    2. In a bowl, mix together the salt and flour, then cut in the butter and rub between your fingertips until the mixture resembles breadcrumbs. Add the sugar and coconut (if using) and mix well. Mix in the egg and milk until a dough forms then divide the mixture into 12.
    3. Shape each into a bun and place on the prepared tray. Make a well in the centre of the bun using your thumb and spoon a little jam into the hole.
    4. Bake in the preheated oven for 10 to 12 minutes, until they are brown and risen. Remove from the oven and allow to cool before serving and enjoying.

    Always an old favorite used to make at school and then with the daughter and now the grand kids they live them I add a cap full of amareto instead of vanilla or coconut this is totally optional either way they taste great..off to make another batch 😀  -  02 Sep 2015
