About this recipe: A colourful vegetarian quiche with a filling of juicy roasted peppers and ruby red onions in a tangy goat's cheese filling. The pastry includes oats, adding a lovely nutty flavour and valuable fibre. Enjoy with a mixed salad.
If you have some, spread onion ‘marmalade’ on the pastry base instead of the red onions. And try sliced roasted artichokes in oil instead of the peppers, plus a few snipped sun-dried tomatoes.
