Tasty sausage casserole

    This meat based casserole makes a change from the usual tomato based ones. This casserole contains sausages and vegetables with lots of great spices and flavours.

    Serves: 4 

    • 1 large white onion, sliced
    • 1 medium red onion, sliced
    • 3 cloves garlic, sliced
    • 1 tablespoon dried mixed herbs
    • 1 teaspoon ground cumin
    • 1 teaspoon dried coriander
    • 1 teaspoon English mustard powder
    • 1 heaped tablespoon tomato puree
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon sunflower or olive oil
    • 6 to 8 medium potatoes, hlaved
    • 5 large carrots, chopped
    • 8 pork sausages
    • 400ml chicken stock
    • 200ml vegetable stock (or just use all chicken stock)

    1. Preheat the oven to 190 C / Gas 5.
    2. In a bowl, combine the onions, garlic, herbs, cumin, coriander, mustard, tomato puree and Worcestershire sauce and mix well.
    3. In a frying pan over a medium heat, warm the oil then add the onion mixture and cook and stir for about 5 minutes until the onions soften. Transfer to a bowl and set aside.
    4. Cook the sausages under a grill or in a frying pan until sealed but not fully cooked then cut them in half lengthways.
    5. Into an ovenproof casserole dish, add the sausages, onion mixture and the remainder of the ingredients and stir gently. Season to taste and cover.
    6. Bake in the preheated oven for about 1 1/2 hours, stirring every half hour or so. Remove from the oven and serve hot.

    This was delicious and really easy to make, I didn't have Worcester sauce so I used soy sauce and red wine but I would definitely make this recipe again  -  13 Nov 2014


    I didn't put potatoes 8n I used it to go with mash it's cooking in oven now  -  02 Dec 2015
