Easy lemon tart

    This easy lemon tart is lovely combination of crushed ginger biscuits topped with a rich filling and fresh slices of lemon.

    • Base
    • 200g ginger nut biscuits, crumbled
    • 50g butter, melted
    • Filling
    • 3 lemons
    • 2 eggs
    • 1 egg yolk
    • 300g sweetened condensed milk

    1. Preheat oven to 180 C / Gas 4. Lightly dust a 26cm tart tin with flour.
    2. Combine biscuits and melted butter in a food processor. Pulse until the mixture resembles coarse breadcrumbs. Press into the bottom of the prepared tin.
    3. Pour boiling water over lemons, pat dry and zest. Cut one lemon into 6 equal, thin slices. Squeeze juice out of remaining lemons.
    4. Beat eggs and egg yolk for about 5 minutes with an electric mixer. Add lemon juice and zest. Add condensed milk and beat for another 3 minutes.
    5. Pour filling on top of biscuit base. Arrange lemon slices on top.
    6. Bake in preheated oven for 15-20 minutes, or until set.
    7. Cool completely before serving.
