My granny's lemon curd

About this recipe: This is a really simple recipe for lemon curd that can be scaled up easily. Lemon curd can be used in tarts, cakes and many other baking creations.

Makes: 1 jar lemon curd

  • juice and zest of 1 lemon
  • 50g butter
  • 50g caster sugar
  • 1 egg, beaten

  1. Combine the lemon zest, juice, butter and sugar together in a bowl and heat gently over a pan of simmering water.
  2. Lightly whisk the egg and stir into the lemon mixture, whisking until all of the ingredients are well combined. Leave to cook gently for about 8 to 10 minutes stirring occasionally until the mixture is thick and coats the back of a spoon. Allow to cool then use or transfer to a sterilised jar and store in the fridge until needed.


One lemon makes about 1 jar, so depending on how many jars you want, just scale it up.
