Combine the lemon zest, juice, butter and sugar together in a bowl and heat gently over a pan of simmering water.
Lightly whisk the egg and stir into the lemon mixture, whisking until all of the ingredients are well combined. Leave to cook gently for about 8 to 10 minutes stirring occasionally until the mixture is thick and coats the back of a spoon. Allow to cool then use or transfer to a sterilised jar and store in the fridge until needed.
One lemon makes about 1 jar, so depending on how many jars you want, just scale it up.
