    A traditional fruit cake involving tea.

    Serves: 20 

    • 350ml (12 fl oz) brewed tea, cooled
    • 200g (7 oz) soft brown sugar
    • 340g (12 oz) mixed dried fruit
    • 300g (10 oz) self-raising flour
    • 1 egg

    Prep:20min  ›  Cook:20min  ›  Ready in:40min 

    1. Add sugar and mixed fruit to the cold tea and leave to soak overnight.
    2. Add flour and egg to the tea mixture and stir until the mixture is smooth.
    3. Line a loaf tin with non-stick baking parchment and pour the mixture in.
    4. Bake in a 180 C / Gas 4 oven for 90 minutes. Towards the end of baking, check every 10 minutes with a knife to see if all mixture is cooked.
    5. Once cooled, slice and serve topped with butter.

    Very moist and tasty. My mixed fruit was part dates and prunes as well as raisins  -  29 Jan 2011


    Something else. I baked this for 60 minutes; I think 90 minutes would have burnt it to a crisp! 375 F is awfully high.  -  29 Jan 2011
