Chocolate, basil and apple pudding

    Fresh herbs work really well in desserts. Sweet basil is perfect in this rich, chocolatey pudding.

    Serves: 8 

    • 175g butter
    • 200g plain chocolate, broken into pieces
    • 3 medium eggs
    • 175g caster sugar
    • 100g plain flour
    • 40g cocoa powder
    • 1 to 2 teaspoons finely chopped fresh basil
    • 2 Bramley apples - peeled, cored and sliced

    1. Preheat the oven to 180 C / Gas 4. Grease a 2L ovenproof dish.
    2. Melt the butter and chocolate together in a bowl over a pan of simmering water.
    3. In a separate bowl, whisk the eggs and sugar together until pale and fluffy then whisk into the chocolate mixture.
    4. Sift together the flour and cocoa powder and stir into the mixture. Add in half of the basil and mix.
    5. Place the apples in the dish and sprinkle over the remaining basil. Pour the cake mixture over.
    6. Bake in the preheated oven for 30 to 35 minutes until the apples are tender and the pudding is still slightly gooey in the centre. Remove from the oven and serve.
