Whipped berry porridge

    Fluffy crimson semolina is swollen with juicy fruit to bring a refreshing lightness to this warming comforter.

    Serves: 2 

    • 25 g (4½ oz) berries, such as raspberries and blackberries, defrosted if frozen
    • 1 tablespoon caster sugar
    • Salt
    • 50 g (1¾ oz) semolina
    • To serve
    • 2 tablespoons natural or lemon-flavoured low-fat yoghurt, optional

    1. Pick over the berries, reserving a few as a garnish, and purée the rest with 500 ml (18 fl oz) of water, using a hand-held mixer. Strain the mixture through a fine nylon sieve into a small saucepan.
    2. Add the sugar and a pinch of salt to the pan and place it over a medium heat. Bring the purée to a rolling boil then gently whisk in the semolina, taking care the mixture does not boil over. Then reduce the heat as far as possible and leave the mixture to simmer for about 20 minutes, stirring frequently, until it thickens.
    3. Pour the porridge into two bowls and leave them to cool for 5 minutes. Serve garnished with the reserved fruit and yoghurt, if using.
