Classic rice pudding

    Made on the hob for speed, this classic rice pudding has all the flavour of a baked pudding but in half the time. Serve with some fresh fruit or a dollop of your favourite jam.

    • 4 to 5 tablespoons caster sugar
    • 120g pudding rice
    • 750ml full fat milk
    • 250ml single cream
    • 1 pinch ground cinnamon
    • 1/2 teaspoon vanilla extract
    • jam, for serving

    1. Combine all of the ingredients, except the jam, in a saucepan over a medium heat and bring to a boil, stirring constantly. Lower the heat and simmer very gently for 30 to 35 minutes, or until the liquid is absorbed and the rice is tender. Spoon into warmed serving bowls and serve with a dollop of jam.
