    About this recipe: These gorgeous Christmas biscuits are pretty additions to decorate your tree but also delicious enough to eat. A vanilla biscuit is cut out with a hole in the centre and baked with a coloured sweet in the middle. The result is a gorgeous stained glass centre!

    Ingredients
    Makes: 2 to 3 dozen biscuits

    • 225g plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 110g butter, room temperature
    • 180g caster sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 200g coloured boiled sweets, separated by colour and crushed

    1. Sift together the flour, baking powder and salt. In a separate bowl, cream together the butter and sugar till light and fluffy, then add the egg and vanilla. Combine the wet and dry ingredients and work together with your hands till a smooth dough is formed. Gather into a ball, wrap in cling film and place in fridge to rest for 30 minutes.
    2. Preheat the oven to 180 C / 160 C Fan / Gas 4. Line a baking tray with parchment.
    3. On a lightly floured work surface, roll out the biscuit dough to 2mm thick. Cut out desired shapes, such as stars. Cut the centre out of each shape using a smaller cutter. Transfer the biscuits to the parchment-lined tray. Place 1/2 to 1 teaspoon of the crushed sweets in the hollow centre of each biscuit. If desired, use a straw to cut out a hole at the top of each biscuit to easily thread them for Christmas tree decorations later.
    4. Bake in the preheated oven for 12 to 18 minutes, or till the biscuits are a light golden brown and the sweets are melted in the centre.
    5. Remove from the oven and let cool completely before removing from tray.

    We didn't have extract so we used Cinamon spice mix instead. It's for a UNICEF Bakesale at Plymouth College of Art, UK - 29 Nov 2015
