About this recipe:Use homemade or shop-bought apple sauce to make this easy Polish cake. I make my apple sauce with cinnamon, which also flavours this cake, but if you're using plain apple sauce simply add a teaspoon of ground cinnamon to the apple sauce before spreading over the cake mixture.
Makes: 1 (22x33cm) cake
200g caster sugar
400g plain flour
2 teaspoons baking powder
925g apple sauce with cinnamon
icing sugar, for dusting

Preheat the oven to 180 C / Gas 4. Grease a 22x33cm (9x13 in) cake tin and line with baking parchment.
Cream together the butter and sugar till light and fluffy. Add eggs one at a time, beating well after each addition.
Combine flour and baking powder. Gradually sift dry ingredients into the wet mixture, mixing between each addition.
In a separate bowl, add 6 to 8 heaping tablespoons of the cake mixture (about 250ml). To this, gradually add the milk till a creamy mixture forms. You should have a thick pancake batter-like consistency.
Spread the first cake mixture into the prepared tin and level out with the back of a spoon. Spread the apple sauce on top of the cake mixture in an even layer. Finally, spread out the second cake mixture over the apple sauce.
Bake in the preheated oven for 50 minutes, till the top of the cake is a deep golden brown. Remove and let cool, then dust with icing sugar before slicing.
