3 tablespoons olive oil
1 large green chilli, deseeded and finely chopped
2 large cloves garlic, crushed
A large pinch of ground cumin
500 g (1 lb 2 oz) minced turkey
Salt and black pepper
4 large field mushrooms
2 large tomatoes, halved
8 slices French bread
4 large fresh basil leaves

Heat 1 tablespoon of the oil in a small saucepan, then cook the chilli and garlic for 1-2 minutes until softened. Add the cumin and cook for a further few seconds, then leave to cool.
Stir the chilli and garlic mixture into the minced turkey and add salt and pepper to taste. Divide the mixture into four and shape each portion into a flat patty.
Heat a nonstick frying pan and brush it lightly with 1 tablespoon of oil. Fry the patties for 3-4 minutes on each side, then remove and keep them warm.
Add the mushrooms and tomatoes to the pan, adding more oil if necessary. Fry them for 3-4 minutes, turning once.
Meanwhile, toast the bread then brush the slices lightly with oil. Slice the basil and sprinkle it over the tomatoes. Serve everything together, with some relish or mustard to go with the turkey patties if you like.
For a lower-fat dish, brush the mushrooms and tomatoes with Worcestershire sauce, then grill them.
