Amazingly simple chicken korma

    I love chicken korma and wanted to try to make my own at home, so I came up with this simple and easy recipe! I added lentils because I love the texture they give to the curry and its a great way to keep a balanced diet, but feel free to leave them out.

    Serves: 2 

    • 1 tablespoon olive oil
    • 1 onion, roughly chopped
    • 2 boneless chicken breasts, diced
    • 1 tablespoon curry powder
    • 1/2 tin coconut milk
    • 500ml chicken stock
    • 3 handfuls dried lentils

    1. In a saucepan or wok over a medium heat warm the oil then add the onion and cook and stir until tender, about 4 to 6 minutes. Add chicken and curry powder and cook for 6 to 8 minutes or until the the chicken is no longer pink in the centre.
    2. Add coconut milk, chicken stock and lentils and bring to the boil. You may want to add more or less chicken stock depending on your tastes, if you like a very saucy curry or a dryer curry add more or less.
    3. Simmer on low for about 30 minutes stirring occasionally, add more boiling water if needed during cooking if it is getting dry. Remove from the heat and transfer to a serving bowl. Enjoy with some rice or a naan bread.
