For the cake:
Preheat the oven to 180 C / Gas 4. Grease and line a 15cm round cake tin OR grease a 12-hole muffin tin and line with paper cases.
In a mixing bowl beat together the butter and sugar until light and fluffy. Add the eggs, one at a time, until creamy. Sift in the flour and mix well. Transfer to the prepared cake tin or paper cases.
Bake in the preheated oven for 25 minutes (12 to 16 minutes for cupcakes) until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and allow to cool fully before icing.
For the icing:
Cream the butter until soft, then add half of the icing sugar and mix well. Add the remaining sugar along with the milk and beat until smooth and creamy. Add the food colouring and mix.
Slice the cake horizontally to create two layers. Lay the first layer onto a serving plate and spread the icing over the top before adding the second layer on top to sandwich. Slice and serve. If making cupcakes, decorate as desired using a piping bag or spoon.
