Chloe's almond shortbread

    My 12 year old niece gave me this recipe for shortbread biscuits. It makes delicious shortbread and I also use it to make mince pies. My family always ask for it at this time of year!

    Makes: 2 to 3 dozen biscuits

    • 225g (8 oz) butter
    • 85g (3 oz) caster sugar
    • 280g (10 oz) plain flour
    • 55g (2 oz) ground rice
    • 25g (1 oz) ground almonds
    • 1 pinch salt
    • caster sugar, for dusting

    1. Cream butter and sugar till fluffy. Add flour, rice, almonds and salt. Work together with hands until it forms a smooth ball.
    2. Roll out on a floured surface until approximately 1/2 inch thick and cut into desired shapes. Place on a baking tray. Prick all over with a fork.
    3. Bake in preheated oven at 180 C / Gas 4 until pale golden brown, about 12 minutes. Cool on wire rack and dust with caster sugar to taste.
